Starter

Baked organic egg from Gårdsby, served with champignons from Kristnarp and a warm emulsion of browned celeriac 

or

Bleak roe from Lake Vänern, served “Swedish style” with brioche fried in butter and classical condiments

 

main course

Deep-fried ling with salt flavoured with capers, a purée of peas, sallad of apples from Urshult,
walnuts and celeriac, served with PM’s pommes frîtes and a crayfish mayonnaise

or

Ragout of veal tail, organic turnip and carrots from Solmarka Farm, served with tarragon and a light potato purée

 

dessert 

Pastry Chef Jon’s dessert served in a glass with a compote of pears, nougat mousse, crunch of caramelized milk chocolate and roasted hazelnuts

or

Chocolate pudding with ice-cream flavoured with orange, a chocolate crisp with fennel and a spicy sauce of caramel and browned butter
