Jerusalem artichoke from Sjöviksgård with truffle from Périgord,
quail egg from Lammhult, served with a frisée salad and dried champignons

Bleak roe from Lake Vänern, served “Swedish style” with brioche fried in butter and classical condiments

 

main course

Baked skrei with a purée of swedes from Botulf, served with black chanterelles, crab and a light seafood sauce

or

Glazed veal shoulder with variation of carrots from Solmarka Farm, served with tarragon and a mild mustard sauce

 

dessert 

Pastry Chef Jon’s dessert served in a glass with raspberry compote, mousse of soured cream from Löt Dairy and chocolate crunch
